Ultimate Loaded Potato Meatloaf Recipe

Ingredients
  

1 lb ground beef (or a mixture of beef and pork)

1 cup mashed potatoes (prepared and cooled)

1/2 cup shredded cheddar cheese

1/2 cup crumbled bacon (cooked)

1/4 cup green onions (chopped)

1/4 cup milk

1/2 cup breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Topping:

1 cup ketchup (or BBQ sauce)

1/4 cup additional shredded cheddar cheese

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large mixing bowl, combine the ground beef, mashed potatoes, shredded cheddar cheese, crumbled bacon, green onions, milk, breadcrumbs, eggs, garlic powder, onion powder, Worcestershire sauce, and season with salt and pepper. Mix until just combined; be careful not to overmix.

      Shape the mixture into a loaf and place it on a lined baking sheet or in a greased loaf pan.

        Prepare the topping by spreading the ketchup (or BBQ sauce) evenly over the top of the meatloaf. Sprinkle the additional cheddar cheese on top of the sauce.

          Bake in the preheated oven for about 45-55 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).

            Once done, remove from the oven and let it rest for about 10 minutes before slicing.

              Serve warm, garnished with fresh parsley, and enjoy your ultimate loaded potato meatloaf!
