Ingredients
  

1 can (15 oz) of white beans (cannellini or great northern), drained and rinsed

2 tablespoons olive oil

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

6 cups vegetable broth

1 cup diced tomatoes (canned or fresh)

2 cups kale or spinach, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Crusty bread or croutons for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the diced carrots and celery, cooking for an additional 5-6 minutes until softened.

      Add the minced garlic, rosemary, and thyme; cook for 1 minute until fragrant.

        Pour in the vegetable broth and diced tomatoes, bringing the mixture to a boil.

          Once boiling, reduce heat to a simmer and add the rinsed white beans. Let the soup simmer for about 20-25 minutes to allow the flavors to meld.

            In the last 5 minutes of cooking, stir in the chopped kale or spinach until just wilted.

              Season with salt and pepper to taste. Remove from heat and let it cool for a few minutes.

                Serve hot, garnished with fresh parsley. For an extra touch, provide crusty bread or croutons on the side for dipping.
