Tuscan Chicken Pasta Recipe

2 boneless, skinless chicken breasts

8 oz penne pasta

2 tbsp olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing into bite-sized pieces.

      Sauté the Garlic and Tomatoes: In the same skillet, add the remaining tbsp of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped sun-dried tomatoes and cook for 2-3 more minutes.

        Create the Sauce: Lower the heat and pour in the heavy cream. Stir well, bringing it to a gentle simmer. Add Parmesan cheese and stir until melted and fully incorporated. Season with a little more salt, pepper, and Italian seasoning if desired.

          Combine: Add the cooked penne pasta, sliced chicken, and fresh spinach to the skillet. Toss everything together to coat the pasta and chicken in the creamy sauce. Cook for an additional 2-3 minutes or until the spinach is wilted.

            Garnish and Serve: Remove from heat and garnish with fresh basil. Serve immediately while it's warm and creamy.
