Tropical Pineapple-Glazed Chicken Recipe: A Sweet and Savory Delight

4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup brown sugar

1/4 cup soy sauce

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon cornstarch

2 tablespoons water

Salt and pepper, to taste

2 tablespoons olive oil

Fresh pineapple wedges, for grilling (optional)

Chopped green onions and sesame seeds, for garnish

Instructions
 

Prepare the Marinade: In a bowl, combine the pineapple juice, brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger. Mix well until the sugar is dissolved.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably up to 4 hours.

      Preheat the Grill or Oven: If grilling, preheat your grill over medium-high heat. If using an oven, preheat to 400°F (200°C).

        Cook the Chicken: Remove chicken from the marinade, letting excess marinade drip off. Pat it dry with paper towels and season with salt and pepper. If grilling, brush with olive oil and grill for about 6-8 minutes per side, or until the chicken is cooked through. For oven cooking, place on a baking sheet and bake for 25-30 minutes.

          Make the Glaze: While the chicken is cooking, pour the reserved marinade into a small saucepan. In a separate bowl, mix the cornstarch with water to create a slurry. Bring the marinade to a boil over medium heat, then stir in the cornstarch mixture. Cook for another 2-3 minutes until the sauce thickens.

            Glaze the Chicken: Once the chicken is done, brush the thickened glaze over it and let it rest for a few minutes. Optional: Grill fresh pineapple wedges for an additional 2-3 minutes until caramelized.

              Serve: Slice the glazed chicken and serve it hot, garnished with chopped green onions and sesame seeds. Pair it with grilled pineapple and steamed rice or a fresh salad.
