Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup whole milk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

Optional toppings: whipped cream, fresh berries, or extra chocolate syrup

Instructions

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.

In another bowl, mix the milk, egg, melted butter, and vanilla extract until thoroughly blended.

Pour the wet ingredients into the dry ingredients, and gently stir until just combined. It's okay if there are a few lumps – do not over mix!

Fold in the chocolate chips, giving the batter an extra chocolaty goodness.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or additional butter.

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, and edges look set, about 2-3 minutes.

Flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown.

Remove from the skillet and keep warm while cooking the remaining pancakes.

Serve warm with your choice of toppings, such as whipped cream, fresh berries, or a drizzle of chocolate syrup.
