2 cups cooked chicken breast, chopped

1 cup romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup cilantro, chopped

1 cup shredded cheddar cheese

1/4 cup sliced pickled jalapeƱos (optional)

1/4 cup lime juice

1/4 cup olive oil

1 teaspoon cumin

Salt and pepper to taste

Tortilla chips (for garnish)

Instructions
 

In a large mixing bowl, combine the cooked chopped chicken, romaine lettuce, cherry tomatoes, corn, black beans, diced avocado, red onion, cilantro, shredded cheddar cheese, and pickled jalapeƱos (if using).

    In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
