1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

2 cups cooked white or brown rice

1 cup steamed broccoli florets

1/2 cup shredded carrots

1/4 cup sliced green onions

Marinate the Chicken: In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Add the chicken thighs, ensuring they're well coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
