Ingredients

2 large red onions, thinly sliced

2 tablespoons sumac

1 teaspoon salt

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (optional)

1 teaspoon chili flakes (optional, for extra spice)

Instructions

In a large bowl, combine the thinly sliced red onions with salt. Let them sit for about 10 minutes to draw out their moisture and soften.

After 10 minutes, add the sumac, olive oil, and fresh lemon juice to the onions. Toss well to ensure all the onions are coated evenly.

If desired, add chili flakes for an extra kick and parsley for freshness. Mix everything thoroughly.

Allow the mixture to marinate at room temperature for at least 30 minutes. This will enhance the flavors and further soften the onions.

Serve the sumac onions as a tangy side dish, a savory topping for grilled meats, or as part of a mezze platter.
