Ingredients

1 lb (450g) ground beef

8 oz (225g) rice noodles or egg noodles

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons hoisin sauce

1 tablespoon sesame oil

1 cup bell peppers (sliced, any color)

1 cup green onions (chopped)

1/2 cup carrots (julienned)

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (optional for spiciness)

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions

Cook the Noodles: Start by boiling a pot of water. Once boiling, add the rice or egg noodles and cook according to the package instructions. Drain and set aside.

Sauté Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds or until fragrant.

Brown the Beef: Increase the heat to high, then add the ground beef to the skillet. Cook, breaking it up with a spatula, until the beef is browned and cooked through (about 5-7 minutes). Drain any excess fat.

Mix Sauce Ingredients: In a small bowl, whisk together soy sauce, brown sugar, hoisin sauce, sesame oil, rice vinegar, and red pepper flakes if using.

Add Vegetables: To the skillet with beef, add the bell peppers, green onions, and carrots. Cook for about 3-4 minutes until the vegetables are slightly tender.

Combine Everything: Pour the sauce over the beef and vegetables, stirring well to combine. Continue cooking for another 2-3 minutes until everything is heated through.

Toss in Noodles: Add the drained noodles to the skillet. Toss everything together gently, ensuring the noodles are well coated with the sauce and mixed with the beef and vegetables.

Serve: Plate the Mongolian ground beef noodles and garnish with sesame seeds and fresh cilantro for a vibrant touch. Enjoy!
