Ingredients

For the filling:

4 cups fresh strawberries, hulled and sliced

4 cups fresh peaches, peeled and diced

1/2 cup granulated sugar

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 teaspoon cinnamon

For the crisp topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/2 teaspoon salt

6 tablespoons unsalted butter, melted

1/4 cup chopped walnuts (optional)

Instructions

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced strawberries and diced peaches. Sprinkle with granulated sugar, cornstarch, vanilla extract, lemon juice, and 1/2 teaspoon of cinnamon. Gently toss until the fruit is well-coated. Pour the fruit mixture into a greased 9x13 inch baking dish, spreading it evenly.

Make the Crisp Topping: In another bowl, mix rolled oats, all-purpose flour, brown sugar, baking powder, 1/2 teaspoon of cinnamon, and salt. Stir in the melted butter until the mixture is crumbly. If using walnuts, fold them into the topping mixture.

Assemble the Crisp: Evenly distribute the crisp topping over the prepared fruit filling, ensuring that it covers the fruit completely.

Bake: Preheat your oven to 350°F (175°C). Place the baking dish in the oven and bake for 35-40 minutes, or until the crisp is golden brown and the fruit is bubbling.

Cool and Serve: Remove from the oven and let it cool for about 10 minutes before serving. This crisp is delightful served warm with a scoop of vanilla ice cream or some whipped cream on top!
