Ingredients

1 cup unsalted butter, melted

1 1/4 cups brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup fresh strawberries, hulled and chopped

1/2 cup white chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal of the blondies.

Mix the Wet Ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt to combine.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix; the batter should be thick but smooth.

Add Strawberries: Gently fold in the chopped strawberries and white chocolate chips (if using) until evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean with a few moist crumbs (not wet batter).

Cool and Cut: Allow the blondies to cool in the pan on a wire rack for about 15 minutes. Use the parchment overhang to lift them out of the pan and let them cool completely on the rack. Once cooled, cut into squares.

Serve: Enjoy your delicious Strawberry Lemon Blondies plain, or dust them with powdered sugar for an extra touch!
