Spicy Pineapple Jalapeño Chutney

Ingredients
  

2 cups fresh pineapple, finely diced

2-3 fresh jalapeños, minced (adjust based on heat preference)

1 medium red onion, finely chopped

1 cup sugar (or brown sugar for a deeper flavor)

1/2 cup apple cider vinegar

1/4 cup fresh lime juice

1 tsp ground ginger

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1/4 cup chopped fresh cilantro (optional)

Instructions
 

In a medium saucepan, combine the diced pineapple, minced jalapeños, chopped red onion, and sugar.

    Add the apple cider vinegar, fresh lime juice, ground ginger, ground cumin, salt, and black pepper to the saucepan.

      Stir the mixture well to ensure all ingredients are combined.

        Place the saucepan over medium heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring occasionally.

          The chutney is ready when it thickens slightly and the pineapple becomes tender. If you like a smoother texture, you can blend it to your desired consistency using an immersion blender.

            Remove the chutney from the heat and let it cool for a few minutes. If desired, stir in the chopped cilantro for added freshness.

              Transfer the chutney to a clean jar or container and let it cool completely before sealing. Store in the refrigerator for up to two weeks.
