Ingredients

1.5 lbs boneless, skinless chicken thighs

3 fresh jalapeños, diced (seeds removed for less heat, if desired)

4 cloves garlic, minced

1 medium onion, finely chopped

1 bell pepper (any color), diced

2 tbsp olive oil

1 tsp smoked paprika

1 tsp cumin

1 tsp chili powder

1/2 tsp salt (to taste)

1/2 tsp black pepper (to taste)

1 cup chicken broth

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions

Marinate the Chicken: In a bowl, combine the diced jalapeños, garlic, smoked paprika, cumin, chili powder, salt, black pepper, and lime juice. Add the chicken thighs, ensuring they are well-coated in the mixture. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking for 4-5 minutes until they soften and become fragrant.

Cook the Chicken: Remove the marinated chicken from the fridge and add it to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is browned and cooked through.

Add Chicken Broth: Pour the chicken broth into the skillet, scraping any browned bits from the bottom. Bring to a simmer and let it cook for another 10-15 minutes, allowing the flavors to blend and the sauce to thicken slightly.

Final Touches: Once the chicken is cooked and tender, garnish the dish with fresh chopped cilantro. Adjust seasoning if necessary.

Serve: Serve hot with rice, tortilla chips, or in soft tacos, along with additional lime wedges on the side.
