Southwest Ground Beef and Sweet Potato Skillet

Ingredients
  

1 lb ground beef

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced bell peppers (red or yellow)

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally until they start to soften.

      Push the sweet potatoes to one side of the skillet and add the diced onion and bell peppers. Cook for another 3-4 minutes until the onions are translucent and the peppers are tender.

        Add the minced garlic and cook for an additional minute until fragrant.

          In the center of the skillet, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes.

            Once the beef is browned, stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix everything well.

              Add the black beans and corn to the skillet, stirring until heated through, about 3-4 minutes.

                Taste the mixture and adjust seasoning if necessary.

                  Remove from heat and garnish with fresh cilantro.

                    Serve immediately with sliced avocado and lime wedges for an extra zing!
