Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1 large egg, beaten

1/2 cup milk

1 tsp vanilla extract

Vegetable oil for frying

Powdered sugar, for dusting (optional)

Honey or maple syrup, for serving (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, cinnamon, and salt. Mix well until all dry ingredients are evenly distributed.

    In a separate bowl, whisk together the beaten egg, milk, and vanilla extract until combined.

      Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

        Heat about 1/4 inch of vegetable oil in a skillet over medium heat.

          Once the oil is hot, drop spoonfuls of the batter into the skillet, spacing them out to allow for spreading.

            Fry for about 2-3 minutes on each side or until golden brown and crispy. Adjust the heat as needed to prevent burning.

              Remove the fritters and place them on a paper towel-lined plate to drain excess oil.

                Serve warm, dusted with powdered sugar and drizzled with honey or maple syrup, if desired.
