Sheet Pan Sausage and Veggies

Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

2 cups bell peppers (red, yellow, and green), sliced

1 cup red onion, sliced

2 cups zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced bell peppers, red onion, zucchini, and cherry tomatoes.

      In a small bowl, whisk together the olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper.

        Pour the olive oil mixture over the vegetables and toss until they are well coated.

          Spread the seasoned veggies evenly on a large sheet pan.

            Cut the Italian sausages into 1-inch pieces and scatter them over the vegetables on the sheet pan.

              Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through, until the sausages are cooked through and the veggies are tender and lightly caramelized.

                Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired.

                  Serve hot, either on its own or with crusty bread, rice, or pasta.
