Seven Layer Chicken Burritos

Packed with seasoned shredded chicken, black beans, corn, quinoa, salsa, and topped with melted cheese, lettuce, and avocado, these burritos are a flavor explosion. 2 cups cooked, shredded chicken (seasoned with taco seasoning)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked quinoa or rice

1 cup salsa (your choice of mild, medium, or hot)

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 ripe avocado, diced

1/4 cup sour cream

8 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: In a medium bowl, combine the shredded chicken with taco seasoning and a splash of water. Mix well and gently heat in a skillet over medium heat until warmed through.

    Warm Tortillas: In a dry skillet, warm each tortilla for about 30 seconds on each side, or until they are pliable. This will help prevent them from tearing.

      Assemble the Burritos: Lay one tortilla on a clean surface. Start by layering 1/4 cup of the shredded chicken in the center, followed by 2 tablespoons of black beans, 2 tablespoons of corn, 1/4 cup of quinoa/rice, and 2 tablespoons of salsa.

        Add the Layers: Sprinkle 2 tablespoons of shredded cheese, a handful of shredded lettuce, and a few pieces of diced avocado on top of the salsa layer.

          Wrap the Burrito: Fold the sides of the tortilla over the filling, then tightly roll the tortilla from the bottom up to encase all the layers. Place seam-side down on a plate.

            Repeat Assembly: Continue assembling the remaining burritos with the leftover ingredients.

              Optional - Grill the Burritos: For added texture, lightly grill each burrito seam-side down in a skillet for about 2-3 minutes on each side until golden and crisp.
