2 cups watermelon, pureed

1/4 cup chia seeds

1 cup coconut milk (or almond milk)

1-2 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

Pinch of salt

Fresh berries (strawberries, blueberries, raspberries) for topping

Mint leaves for garnish (optional)
