One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (about 6 ounces each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 tablespoon olive oil

2 tablespoons unsalted butter

2 cloves garlic, minced

Zest and juice of 1 lemon

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sear the Salmon:

    - Heat a skillet over medium-high heat and add the olive oil. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon skin-side down. Sear for about 4-5 minutes until golden, then flip and cook for another 2-3 minutes. Remove the salmon from the skillet and set aside.

      Cook the Orzo:

        - In the same skillet, reduce the heat to medium. Add the butter and minced garlic, and sauté for about 1 minute until fragrant. Add the orzo and toast it lightly for 1-2 minutes, stirring constantly.

          Add the Broth:

            - Pour in the broth, lemon juice, and zest. Stir in the cherry tomatoes and oregano. Bring to a boil, then lower the heat and let it simmer uncovered for about 8-10 minutes or until the orzo is al dente and the liquid has mostly absorbed, stirring occasionally.

              Combine Ingredients:

                - Gently place the seared salmon back into the skillet on top of the orzo. Cover and cook on low heat for an additional 3-4 minutes until the salmon is cooked through and the orzo is creamy.

                  Serve:

                    - Remove from heat and adjust seasoning with salt and pepper if needed. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
