Ingredients
  

4 salmon fillets (6 oz each)

1 cup orzo pasta

3 cups low-sodium chicken broth

1 lemon (zested and juiced)

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 teaspoon red pepper flakes (optional)

Instructions
 

Prepare the Salmon: Season the salmon fillets with salt, pepper, and half of the lemon juice and zest. Let them rest while you prepare the orzo.

    Cook the Orzo: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté until fragrant (about 30 seconds).

      Add Broth and Orzo: Pour in the chicken broth and bring to a boil. Stir in the orzo, and reduce the heat to a simmer. Cook according to package instructions, usually about 8-10 minutes, until tender and most of the liquid is absorbed.

        Sear the Salmon: While the orzo is cooking, in another pan or pushing the orzo to one side, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy. Carefully flip them and cook for an additional 3-4 minutes, or until cooked to your preferred doneness. Remove from the pan and set aside.

          Add Veggies: In the skillet with the orzo, add the halved cherry tomatoes and baby spinach. Stir gently until the spinach is wilted and the tomatoes are softened, about 2 minutes.

            Combine and Finish: Stir in the remaining lemon zest, red pepper flakes (if using), and the rest of the lemon juice. Taste and adjust seasoning with salt and pepper as needed.

              Serve: Plate the orzo mixture on a serving dish, topping it with the seared salmon. Garnish with chopped fresh parsley for added color and freshness.
