1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper to taste

4 cups chicken broth

1 lb (450g) potato gnocchi

1 cup heavy cream

Juice and zest of 1 lemon

2 cups baby spinach

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken thighs, season with salt, pepper, thyme, and oregano. Sear until the chicken is golden brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Garlic: In the same pot, add minced garlic and sauté for about 1 minute, just until fragrant.

      Add Broth: Pour in the chicken broth, scraping up any browned bits from the bottom of the pot for added flavor. Bring to a gentle boil.

        Cook Gnocchi: Add the potato gnocchi into the boiling broth and cook for 2-3 minutes until they start to float to the top.

          Cream and Season: Lower the heat, then stir in the heavy cream, lemon juice, and lemon zest. Return the seared chicken to the pot and let everything simmer for another 5-7 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

            Fold in Spinach: Add the baby spinach and cook until wilted, about 2 minutes. Stir in the grated Parmesan cheese, mixing well until it’s melted and incorporated.

              Serve: Taste the dish and adjust seasoning if needed. Garnish with freshly chopped parsley before serving.
