No Bake Pineapple Cream Dessert

This no-bake dessert features layers of silky pineapple cream made from heavy whipping cream, sweetened condensed milk, and delicious crushed pineapple, all nestled on a bed of graham cracker goodness. 1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup sweetened condensed milk

1 tsp vanilla extract

1 cup crushed graham crackers

1/4 cup unsweetened coconut flakes (optional)

Fresh pineapple chunks for garnish

Mint leaves for garnish

Instructions
 

Prepare the Base: In a medium bowl, combine the crushed graham crackers and coconut flakes (if using). Mix well and set aside.

    Make the Cream Mixture: In a large mixing bowl, whip the heavy cream using an electric mixer on high speed until soft peaks form. Gradually add the sweetened condensed milk and vanilla extract while continuing to whip until fully combined and smooth.

      Add Pineapple: Fold in the drained crushed pineapple into the cream mixture gently until evenly distributed. Be careful not to deflate the whipped cream.

        Layer the Dessert: In a 9x9 inch dish (or similar size), spread a layer of the graham cracker mixture on the bottom. Then, pour half of the pineapple cream mixture on top, smoothing it out with a spatula. Repeat the layers with the remaining graham cracker mixture and finish with the rest of the cream mixture on top.

          Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

            Serve: Once chilled and set, cut into squares and garnish with fresh pineapple chunks and mint leaves before serving.
