4 chicken thighs (bone-in, skin-on for moisture)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

1 teaspoon ground ginger

1 teaspoon turmeric

1 tablespoon honey

2 cloves garlic (minced)

1 small onion (finely chopped)

1 cup chicken broth

Salt and pepper to taste

Fresh cilantro (for garnishing)

Lemon wedges (for serving)

Marinate the Chicken: In a bowl, mix the olive oil, cumin, coriander, cinnamon, smoked paprika, ginger, turmeric, honey, and minced garlic. Season the chicken thighs with salt and pepper, then coat them with the marinade. Cover and let sit for at least 30 minutes, or overnight for best flavor.

    Sear the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs, skin side down, and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 4-5 minutes. Remove the chicken and set aside.

      Sauté the Aromatics: In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes. Scrape the bottom of the pan to ensure all the flavorful bits incorporate into the mixture.

        Add Broth and Cook: Pour in the chicken broth and bring to a simmer. Return the chicken to the skillet, cover, and reduce the heat to low. Let it cook for about 25-30 minutes until the chicken is cooked through and tender, basting occasionally with the broth.

          Finishing Touches: Once cooked, remove the chicken from the skillet and let it rest for a few minutes. You can reduce the sauce further if desired, by simmering it without the chicken for a few minutes until slightly thickened.

            Serve: Plate the chicken, drizzle with the sauce, and garnish with fresh cilantro. Serve with lemon wedges on the side to squeeze over the chicken for extra brightness.
