4 salmon fillets (6 oz each)

1 cup cherry tomatoes, halved

1 cup Kalamata olives, pitted and sliced

1/2 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

3 cloves garlic, minced

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, basil, salt, and pepper. Mix well.

      Marinate the Salmon: Place the salmon fillets in a shallow baking dish and pour half of the marinade over them. Let it marinate for about 15-20 minutes.

        Arrange the Vegetables: In a separate bowl, toss together the cherry tomatoes, Kalamata olives, and red onion with the remaining marinade.

          Assemble the Dish: After marinating, place the salmon fillets in the center of a large baking sheet and surround them with the vegetable mixture. Sprinkle the crumbled feta cheese over the salmon and veggies.

            Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Garnish and Serve: Once done, remove from the oven, garnish with fresh parsley, and serve with lemon wedges on the side.
