1 pound boneless, skinless chicken thighs

6 cups chicken broth

1 cup carrots, diced

1 cup celery, diced

1 cup onion, diced

3 cloves garlic, minced

1 cup orzo pasta

1 cup fresh spinach, chopped

Juice and zest of 2 large lemons

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken thighs and season with salt and pepper. Cook until browned on both sides, about 4-5 minutes each side. Remove the chicken and set aside.

    Sauté the Vegetables: In the same pot, add the onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened. Add the garlic and cook for another minute, until fragrant.

      Add Broth and Seasonings: Pour in the chicken broth. Stir in oregano, thyme, and additional salt and pepper as needed. Bring to a boil.

        Cook the Orzo: Once boiling, return the chicken to the pot. Add the orzo pasta and reduce the heat to a simmer. Cook for about 10 minutes, or until the orzo is tender and the chicken is cooked through.

          Shred the Chicken: Remove the chicken thighs from the pot and shred them with two forks. Return the shredded chicken to the soup pot.

            Add Cream and Spinach: Stir in the heavy cream, lemon juice, and lemon zest. Add the fresh spinach and cook for another 2-3 minutes until the spinach is wilted and vibrant.

              Adjust Seasoning: Taste the soup and adjust the seasoning with more lemon juice, salt, and pepper if needed.
