Mediterranean-Inspired Lemon-Dill Chicken Bowls

Ingredients
  

1 lb chicken breast, boneless and skinless

2 tablespoons olive oil

Juice and zest of 1 large lemon

2 teaspoons dried dill or 2 tablespoons fresh dill, finely chopped

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley, chopped, for garnish

Instructions
 

Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, dill, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they’re well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Cook the Quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the quinoa, reduce to a simmer, cover, and let it cook for about 15 minutes, or until all the liquid is absorbed. Once done, fluff with a fork and set aside.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and slice into strips.

        Prepare the Fresh Vegetables: While the chicken is cooking, prepare the cherry tomatoes, cucumber, and red onion.

          Assemble the Bowls: In each serving bowl, add a scoop of quinoa as the base. Top with sliced lemon-dill chicken, cherry tomatoes, diced cucumber, and red onion. Sprinkle crumbled feta cheese over the top.

            Garnish: Finish with a sprinkle of fresh parsley and an extra drizzle of olive oil and lemon juice, if desired.
