Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini pasta

1 lb boneless, skinless chicken breasts

1 teaspoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup balsamic vinaigrette

1 tablespoon lemon juice

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside to cool.

    Prepare the Chicken: While the pasta is cooking, heat olive oil in a skillet over medium heat. Season chicken breasts with garlic powder, paprika, salt, and pepper. Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

      Combine the Ingredients: In a large mixing bowl, add the cooled pasta, chopped chicken, cherry tomatoes, cucumber, Kalamata olives, feta cheese, red onion, and parsley.

        Dress the Salad: Drizzle the balsamic vinaigrette and lemon juice over the salad. Gently toss everything together until well coated.
