Ingredients

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 cup cherry tomatoes, halved

1 cup heavy cream

2 cups chicken broth

1 tablespoon soy sauce

2 teaspoons sriracha (adjust for spice preference)

4 oz ramen noodles (fresh or dried)

2 cups baby spinach

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Fresh basil or cilantro (for garnish)

Instructions

Season the Chicken: Season both chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika on both sides.

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.

Prepare the Sauce: In the same skillet, add the cherry tomatoes and cook for about 2-3 minutes until they soften. Stir in the heavy cream, chicken broth, soy sauce, and sriracha. Bring the mixture to a gentle simmer.

Cook the Noodles: Add the ramen noodles to the simmering sauce and cook according to package instructions, usually about 3-4 minutes.

Add Spinach: Once the noodles are cooked, stir in the baby spinach and cook for an additional minute until wilted. Slice the seared chicken into strips and return it to the skillet. Stir well to coat everything in the creamy sauce.

Serve: Remove from heat and garnish with chopped green onions, sesame seeds, and fresh basil or cilantro. Serve hot and enjoy a bowl of love in every bite!
