2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried Italian seasoning

1 cup chicken broth

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 cup spinach, fresh

1 pound pasta (fettuccine or penne)

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside. Once cool, slice it into strips.

    Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Stir in the dried Italian seasoning, then pour in the chicken broth and heavy cream. Bring the mixture to a simmer.

      Add Tomatoes and Spinach: Mix in the chopped sun-dried tomatoes and allow them to cook for about 3-4 minutes. Add in the fresh spinach and stir until wilted.

        Combine Everything: Reduce the heat to low and return the sliced chicken to the skillet. Stir in the freshly grated Parmesan cheese until the sauce is creamy and well combined. Season with more salt and pepper to taste.
