Ingredients

8 large eggs

1 cup egg whites

1 cup cooked and crumbled turkey sausage (or chicken sausage for a lighter option)

1 cup diced bell peppers (mix of colors for vibrancy)

1 cup diced onions

1 cup black beans, rinsed and drained

1 cup shredded low-fat cheese (like cheddar or pepper jack)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

8 whole wheat tortillas or low-carb wraps

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Veggies: In a large skillet over medium heat, sauté the diced bell peppers and onions until they are softened, about 5-7 minutes. Season with salt, pepper, cumin, and smoked paprika. Remove from heat and let cool slightly.

Mix the Egg Base: In a large mixing bowl, combine the large eggs and egg whites. Whisk until well combined. Add the sautéed vegetable mixture, crumbled turkey sausage, black beans, and half of the shredded cheese. Stir until evenly incorporated.

Spread on Sheet Pan: Line a large sheet pan with parchment paper. Pour the egg mixture onto the pan and spread it out evenly. Sprinkle the remaining cheese on top.

Bake: Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the eggs are fully set and the edges are lightly golden.

Cool and Cut: Once baked, remove the sheet pan from the oven and let it cool for a few minutes. Use a sharp knife to cut the egg mixture into equal squares (8-10 squares).

Assemble Burritos: Take a tortilla and place one of the egg squares in the center. Roll the burrito by folding in the edges and then rolling tightly. Repeat for all the squares.

Final Cooking Step (Optional): For a crispier burrito, you can place the assembled burritos seam-side down on the sheet pan and return to the oven for an additional 10 minutes at 350°F (175°C) until they are golden.

Serve: Garnish with fresh cilantro and serve with salsa or hot sauce on the side.
