Lemon Garlic Shrimp Pasta With Spinach

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 large lemon

5 cups fresh spinach

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes on each side. Remove the shrimp from the skillet and set aside.

      Prepare the Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant, being careful not to let the garlic burn.

        Add Spinach and Lemon: Add the fresh spinach to the skillet and cook for 1-2 minutes until wilted. Pour in the lemon juice and add the lemon zest, stirring to combine.

          Combine all Ingredients: Return the cooked shrimp to the skillet, and add the drained pasta. Toss everything together, adding the reserved pasta water a little at a time, until the sauce reaches the desired consistency.

            Finish with Cheese: Stir in the grated Parmesan cheese and mix until well combined. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.
