8 oz whole grain pasta (fusilli or penne work great)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup fresh basil leaves, chopped

1/4 cup pine nuts, toasted (optional)

1/4 cup nutritional yeast (for a cheesy flavor)

1/4 cup olive oil

Zest and juice of 2 lemons

1 tablespoon Dijon mustard

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, Dijon mustard, salt, and pepper until well combined.

      Combine the Ingredients: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and chopped basil.

        Add the Dressing: Pour the dressing over the pasta mixture and gently toss until everything is evenly coated.

          Finishing Touches: Add in the nutritional yeast and toasted pine nuts (if using), giving it another gentle toss. Adjust seasoning with additional salt and pepper if necessary.
