Ingredients

1 lb ground beef (preferably lean)

1 tablespoon olive oil

4 cloves garlic, minced

1 cup onion, finely chopped

1 cup carrot, grated

1 tablespoon ginger, minced

1/4 cup soy sauce (low-sodium)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

2 green onions, chopped (for garnish)

2 cups cooked jasmine rice (or rice of choice)

1 cup steamed broccoli florets (optional)

Sesame seeds (for garnish)

Instructions

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.

Cook the Beef: Add the ground beef to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.

Add Vegetables: Stir in the chopped onion, grated carrot, and minced ginger. Sauté until the vegetables have softened, around 3-4 minutes.

Create the Sauce: In a small bowl, mix together the soy sauce, brown sugar, sesame oil, rice vinegar, and red pepper flakes. Pour this mixture over the beef and veggie mixture in the skillet.

Simmer: Stir to combine and let it simmer for another 3-4 minutes until the sauce thickens slightly and everything is heated through.

Serve: Spoon the Korean ground beef mixture over a bed of warm cooked jasmine rice. Add steamed broccoli if desired for extra nutrition.

Garnish: Sprinkle chopped green onions and sesame seeds on top for added flavor and crunch. Serve warm and enjoy!
