Ingredients
  

1 pound ground beef (80/20 for best flavor)

4 cloves garlic, minced

1 inch fresh ginger, grated

1/2 cup soy sauce (low sodium recommended)

1/4 cup brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon gochujang (Korean chili paste)

2 green onions, sliced (plus extra for garnish)

1 tablespoon sesame seeds (toasted)

Cooked rice or quinoa, for serving

Optional: Sliced cucumbers and shredded carrots for topping

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang until well combined. Set aside.

    Cook the Beef: In a large skillet or wok over medium-high heat, add the ground beef. Use a wooden spoon to break it apart as it cooks. Sauté for about 5-7 minutes until browned and cooked through.

      Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

        Combine Sauces: Pour the prepared marinade over the cooked beef, stirring well to combine. Let it simmer for about 3-5 minutes, allowing the sauce to thicken slightly and the beef to absorb the flavors.

          Add Green Onions: Stir in the sliced green onions, reserving some for garnish. Let it cook for another minute.

            Serve: Remove from heat. Spoon the Korean ground beef over bowls of steamed rice or quinoa. Garnish with toasted sesame seeds, remaining green onions, and if desired, sliced cucumbers and shredded carrots.
