Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork for a different flavor)

1/2 cup cooked white rice

2 green onions, finely chopped

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp Korean gochujang (red chili paste)

1 tbsp brown sugar

1 tsp ground black pepper

1/4 cup panko breadcrumbs

1 egg, lightly beaten

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tbsp gochujang

1 tsp rice vinegar

1 tsp lime juice

1/2 tsp garlic powder

Salt to taste

Preheat and Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large mixing bowl, combine ground beef, cooked rice, green onions, minced garlic, soy sauce, sesame oil, gochujang, brown sugar, black pepper, panko breadcrumbs, and the beaten egg. Mix until everything is well combined.

      Shape the Meatballs: Wet your hands slightly and take about 1-2 tablespoons of the mixture to form small meatballs, placing them onto the prepared baking sheet. Ensure they are evenly spaced.

        Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and browned on the outside.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small mixing bowl, whisk together mayonnaise, gochujang, rice vinegar, lime juice, garlic powder, and salt until smooth.

            Serve: Once the meatballs are done, remove them from the oven. Let them cool for a few minutes before serving. Drizzle with sesame seeds for garnish. Serve with the spicy mayo dip on the side.
