Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground turkey)

1/4 cup breadcrumbs (preferably panko)

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons green onions, finely chopped

1 tablespoon garlic, minced

1 tablespoon ginger, minced

1 tablespoon brown sugar

1 teaspoon gochujang (Korean chili paste)

1/2 teaspoon black pepper

1/2 teaspoon salt

1 egg, lightly beaten

Sesame seeds, for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon rice vinegar

1 teaspoon lime juice

1 teaspoon honey

Pinch of salt

Optional: Sriracha for extra heat

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, soy sauce, sesame oil, green onions, garlic, ginger, brown sugar, gochujang, black pepper, salt, and beaten egg. Mix until all ingredients are well combined.

      Form the Meatballs: Using your hands, form the mixture into small meatballs, around 1 inch in diameter. Place them evenly on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until they are fully cooked and golden brown.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip by whisking together the mayonnaise, gochujang, rice vinegar, lime juice, honey, and a pinch of salt in a small bowl. If you like it extra spicy, add a dash of Sriracha.
