For the Meatballs:

1 lb ground beef or pork (or a mix)

1/4 cup panko breadcrumbs

1/4 cup chopped green onions

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon gochujang (Korean chili paste)

1/2 teaspoon black pepper

1 egg, lightly beaten

Sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 teaspoon lime juice

1 teaspoon honey (optional, for sweetness)

1/2 teaspoon garlic powder

Salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large bowl, combine the ground beef (or pork), panko breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, gochujang, black pepper, and the beaten egg. Mix until all ingredients are well incorporated.

      Form the Meatballs: Using your hands, shape the mixture into meatballs about 1 inch in diameter. Place them on the prepared baking sheet, leaving some space between each meatball.

        Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until they are cooked through and have a nice golden color.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, mix together the mayonnaise, gochujang, lime juice, honey (if using), garlic powder, and salt in a small bowl. Adjust the seasoning to taste.
