Jamaican Shrimp Pasta: A Creamy Delight

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, sliced

1 green bell pepper, sliced

1 tbsp Jamaican jerk seasoning

1 cup heavy cream

1/2 cup coconut milk

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tbsp fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and chopped onion, sautéing for about 2 minutes until fragrant. Add the shrimp and sprinkle with Jamaican jerk seasoning. Cook for 3-4 minutes until the shrimp turn pink and are cooked through. Remove them from the skillet and set aside.

      Make the Sauce: In the same skillet, add the sliced red and green bell peppers. Sauté for about 3 minutes until softened. Lower the heat and pour in the heavy cream and coconut milk, stirring well to combine. Allow the sauce to simmer for 5 minutes to thicken slightly.

        Combine Ingredients: Add the cooked fettuccine and shrimp back into the skillet with the sauce. Toss everything together, adding reserved pasta water as needed to achieve your desired sauce consistency. Stir in the Parmesan cheese and season with salt and pepper to taste.

          Garnish and Serve: Remove the skillet from heat and garnish with fresh cilantro. Serve the pasta hot, with lime wedges on the side for an extra zesty flavor.
