Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 teaspoon allspice

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

1/2 cup heavy cream

1 tablespoon soy sauce

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Cook the Pasta:

    - In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

      Sauté Vegetables:

        - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and continue to sauté for an additional minute.

          Add Peppers and Spices:

            - Stir in the sliced red and yellow bell peppers, allspice, and cayenne pepper. Cook for about 3-4 minutes, allowing the peppers to soften.

              Cook the Shrimp:

                - Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, around 3-4 minutes. Remove the shrimp and set aside.

                  Prepare the Creamy Sauce:

                    - Pour in the coconut milk and heavy cream into the vegetable mixture. Stir until combined and bring to a gentle simmer. Let it cook for about 5 minutes, allowing the flavors to meld.

                      Finish the Sauce:

                        - Add the soy sauce and lime juice to the sauce. Adjust seasoning with salt and pepper as needed. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

                          Combine Pasta and Shrimp:

                            - Return the cooked shrimp to the skillet along with the fettuccine. Toss everything together to coat the pasta and shrimp in the creamy sauce evenly.

                              Serve:

                                - Plate the Jamaican shrimp pasta and garnish with chopped cilantro. Serve with lime wedges on the side for an added burst of flavor.
