Ingredients
  

2 cups cooked chicken, shredded or diced

1/2 cup provolone cheese, cubed

1/4 cup diced red onion

1/2 cup diced cucumber

1/2 cup diced bell peppers (any color)

1/4 cup black olives, sliced

1/4 cup pepperoncini, sliced (optional for some heat)

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

3 tablespoons mayonnaise

2 tablespoons red wine vinegar

1 tablespoon olive oil

Fresh parsley, chopped for garnish

Instructions
 

In a large mixing bowl, combine the shredded chicken, provolone cheese, red onion, cucumber, bell peppers, black olives, and pepperoncini.

    In a separate small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, dried oregano, garlic powder, salt, and pepper until well blended.

      Pour the dressing over the chicken and vegetable mixture. Toss gently to ensure all ingredients are evenly coated.

        Adjust seasoning to taste, adding more salt or pepper if needed.
