Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

2 large eggs

1 cup unsweetened apple sauce

½ cup vegetable oil

1 teaspoon vanilla extract

2 cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

Coarse sugar for sprinkling on top

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, beat the eggs and then add the apple sauce, vegetable oil, and vanilla extract. Mix until the ingredients are thoroughly combined.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together until just combined. Do not overmix; it's okay if there are a few lumps.

Add Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed in the batter.

Fill Muffin Tin: Using a spoon or an ice cream scoop, fill each muffin cup about ¾ full with the batter. Sprinkle a little coarse sugar on top of each muffin for added crunch and sweetness.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Cool: Once done, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve: Enjoy these delightful muffins warm or at room temperature, paired with a warm cup of spiced cider or your favorite coffee.
