Ingredients
  

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp salt

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted and cooled

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (about 2 medium-sized apples)

1/2 cup chopped walnuts or pecans (optional)

1 tbsp sugar + 1/2 tsp cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray lightly with cooking spray.

    In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

      In another bowl, mix the brown sugar and granulated sugar, then add in the melted butter. Stir until well combined.

        Beat in the eggs one at a time, mixing in the vanilla extract and then the buttermilk until all ingredients are well incorporated.

          Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.

            Carefully fold in the diced apples and the nuts, if using.

              Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

                In a small bowl, mix the remaining sugar and cinnamon together, then sprinkle the mixture generously over each muffin before baking.

                  Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                    Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
