Ingredients

2 cups rolled oats

2 cups unsweetened almond milk (or any milk of choice)

2 medium apples, peeled, cored, and diced

1/4 cup maple syrup or honey (adjust based on sweetness preference)

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or pecans work well)

1/4 cup raisins or dried cranberries (optional)

Cooking spray or parchment paper for baking

Instructions

Preheat your oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish with cooking spray or line it with parchment paper for easier serving.

Prepare the Oats: In a large mixing bowl, combine the rolled oats, almond milk, maple syrup (or honey), cinnamon, nutmeg, salt, and vanilla extract. Stir well to ensure everything is mixed thoroughly.

Add the Apples and Nuts: Gently fold in the diced apples, chopped nuts, and raisins or cranberries if using. Make sure the apples and other ingredients are evenly distributed throughout the oat mixture.

Transfer to Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.

Bake: Place the dish in the preheated oven and bake for about 35-40 minutes, or until the oatmeal is set and the top is golden brown.

Cool and Serve: Once baked, remove from the oven and let it cool for about 10 minutes. Cut into squares and serve warm. This breakfast bake can be enjoyed as is or with a dollop of Greek yogurt or a drizzle of additional maple syrup on top if desired.
