Ingredients

1 ½ cups apple cider

1 cup all-purpose flour

¾ cup whole wheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp salt

½ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

⅓ cup unsweetened applesauce

¼ cup vegetable oil

1 tsp vanilla extract

½ cup granulated sugar (for coating)

1 tsp ground cinnamon (for coating)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or oil.

Reduce Apple Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce heat and let it simmer until reduced to about ¾ cup, which takes about 15-20 minutes. Set aside to cool slightly.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Sugars and Wet Ingredients: In another bowl, beat together the brown sugar, granulated sugar, eggs, applesauce, vegetable oil, and vanilla extract. Stir in the reduced apple cider until well blended.

Combine and Mix: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; some lumps are okay.

Fill Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.

Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.

Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes, then transfer to a wire rack to cool for an additional 10 minutes. In a shallow bowl, combine the granulated sugar and cinnamon for coating. Roll the warm donuts in the sugar mixture until well coated.

Serve: Enjoy your irresistible apple cider donuts warm or at room temperature. They pair beautifully with a cup of warm cider or coffee!
