1 cup apple cider

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ teaspoon salt

⅓ cup granulated sugar

1 large egg

⅓ cup unsweetened applesauce

2 tablespoons melted unsalted butter

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions
 

Prepare the Apple Cider Reduction: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat to low and let it simmer until it reduces to about ¼ cup (approximately 15–20 minutes). Let this cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray.

      Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        Wet Ingredients: In a large bowl, combine the cooled apple cider reduction, sugar, egg, applesauce, melted butter, and vanilla extract. Whisk until smooth.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be thick but pourable.

            Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about ¾ full. Use a piping bag or a large zip-top bag with a corner snipped off for easier filling.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                  Coat the Donuts: In a shallow bowl, mix the remaining ½ cup sugar with 1 teaspoon cinnamon. Once the donuts are slightly warm, roll each donut in the cinnamon-sugar mixture until fully coated.
