1 cup all-purpose flour

1 tablespoon granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1/2 cup chocolate chips

1/2 cup mini marshmallows

1/4 cup crushed graham crackers

Extra chocolate chips and marshmallows for topping

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over-mix; a few lumps are okay.

        Gently fold in the chocolate chips, mini marshmallows, and crushed graham crackers.

          Preheat your griddle or non-stick skillet over medium heat and lightly grease it with butter or oil.

            Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Carefully flip the pancakes and cook for an additional 2-3 minutes, until golden brown and cooked through.

                Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
