Huli Huli Chicken Recipe

2 lbs chicken thighs (bone-in, skin-on for extra flavor)

1 cup soy sauce

1/2 cup brown sugar

1/4 cup ketchup

1/4 cup rice vinegar

1/4 cup pineapple juice

2 cloves garlic (minced)

1 inch ginger (grated)

1 teaspoon sesame oil

1 teaspoon black pepper

1 teaspoon red pepper flakes (optional for heat)

3 green onions (chopped, for garnish)

1 pineapple (sliced into rings for grilling)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, brown sugar, ketchup, rice vinegar, pineapple juice, garlic, ginger, sesame oil, black pepper, and red pepper flakes (if using). Whisk until well blended. Add the chicken thighs to the marinade, ensuring they are completely coated. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Prepare the Grill: Preheat your grill to medium-high heat. If using charcoal, let the coals burn down to medium-hot. If using a gas grill, ensure it’s properly heated.

      Grill the Chicken: Remove the chicken from the marinade, shaking off excess liquid. Place the thighs skin-side down on the grill grates. Grill for about 7-8 minutes per side, or until internal temperature reaches 165°F (75°C) and the skin is crispy and caramelized. Brush the chicken with the reserved marinade during the last 5 minutes of grilling for added flavor.

        Add Pineapple: During the last few minutes of cooking the chicken, place pineapple rings on the grill. Grill each side for about 2-3 minutes, or until they have nice grill marks and are slightly caramelized.

          Serve: Remove the chicken and pineapple from the grill. Let the chicken rest for 5 minutes before slicing. Serve on a bed of cooked rice, topped with grilled pineapple rings and garnished with chopped green onions.
