2 boneless, skinless chicken breasts

1/4 cup honey

Juice of 2 limes

2 garlic cloves, minced

1 teaspoon chili powder

Salt and pepper to taste

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1 ripe avocado, mashed

Juice of 1 lime

1/4 cup chopped cilantro

Salt and pepper to taste

For the Assembly:

Cherry tomatoes, halved (for garnish)

Lime wedges (for serving)

Fresh cilantro leaves (for garnish)

Marinate the Chicken: In a mixing bowl, combine honey, lime juice, minced garlic, chili powder, salt, and pepper. Place chicken breasts in the marinade, ensuring they are fully coated. Let it marinate for at least 30 minutes, or up to overnight in the fridge for deeper flavor.

    Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes until the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.
