Honey Garlic Butter Roasted Carrots

Ingredients
  

1 pound of baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    In a small saucepan over low heat, melt the butter. Once melted, stir in the honey and minced garlic. Cook for about 1-2 minutes until the garlic is fragrant but not browned. Remove from heat and add the thyme, salt, and pepper.

      In a mixing bowl, combine the carrots with the honey garlic butter mixture. Toss well to ensure all the carrots are evenly coated.

        Spread the carrots out in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

            Remove from the oven and let cool for a couple of minutes. Taste and adjust seasoning with additional salt and pepper if desired.

              Serve warm, garnished with freshly chopped parsley if using.
