Hawaiian Shoyu Chicken

4 chicken thighs (bone-in, skin-on for extra flavor)

1/2 cup soy sauce (preferably low sodium)

1/4 cup brown sugar

1/4 cup honey

1/4 cup rice vinegar

1 tablespoon fresh ginger (grated)

3 cloves garlic (minced)

1 teaspoon sesame oil

1 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

2 green onions (sliced, for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, mix together the soy sauce, brown sugar, honey, rice vinegar, grated ginger, minced garlic, sesame oil, black pepper, and red pepper flakes (if using). Add the chicken thighs to the marinade, making sure they are well-coated. Cover with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.

    Prepare for Cooking: Preheat your grill or oven to medium-high heat (about 375°F or 190°C). If using an oven, line a baking sheet with aluminum foil for easy cleanup.

      Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for basting. If grilling, place the chicken skin-side down on the grill and cook for about 5-7 minutes. Flip the chicken and continue grilling for another 5-7 minutes, basting with the reserved marinade occasionally. For oven cooking, place chicken skin-side up on the baking sheet and roast for 30-35 minutes, basting twice with the marinade.

        Check for Doneness: Ensure the chicken is fully cooked by checking that the internal temperature reaches 165°F (75°C). Remove from heat.

          Serve: Let the chicken rest for 5 minutes before serving. Slice the chicken, drizzle with any remaining sauce, and garnish with sliced green onions and sesame seeds.
